Geometry, every size, from the maker's table

The maker's cockpit

No stock cockpit I can name, so every size is solved on a generic stem and bar unless you choose one on the sheet.

In the maker's words

Kept whole, as I read it off canyon.com.
Canyon integrated cockpit (CP0048 PACE bar on the current Aeroad/Ultimate/Endurace CF SLX and CFR, width-adjustable 390-440 mm): the geometry page prints "Cockpit Dimensions" as stem length - [bar width range] per size and "Spacer in mm" (the shipped spacer stack).

How I read the maker's table
Note the CFR Endurace shares the Aeroad/Ultimate-style race numbers (73.25-73.5 head angles, 413 mm chainstays) rather than the Endurace CF SLX table. Decimal commas (73,25) and thousand points (1.003) converted by script. Fork offset, trail and front centre are NOT published (null). Model year is not printed on the geometry page (null); canyon.json records the Year fields of the product pages for the Ultimate.
